Coconut and White Choc Chip Cookies

Coconut really is the unsung hero of the baking world. It has such a subtle flavour but when teamed up with white chocolate and baked, it really comes to life. When we served up these cookies to friends, they not only raved about how nice they were, but they couldn’t quite put their finger on what the added component was that gave them such a nice flavour kick.

These cookies are super easy to whip up, are super delicious and go really well with an afternoon coffee when three-thirty-itis hits!

What you’ll need:

  • 150 grams softened butter
  • 1 large egg
  • 1/2 cup caster sugar
  • 1/2 cup brown sugar
  • 1 teaspoon of vanilla extract
  • 1 3/4 cups of plain flour
  • 1/2 a cup of white chocolate drops
  • 3/4 a cup of desiccated coconut


  1. Preheat oven to 160°C
  2. Mix together the 150g softened butter, 1/2 cup caster sugar, 1/2 cup brown sugar and 1 teaspoon of vanilla extract for about two minutes or until smooth and well combined then beat in the egg
  3. Stir in 1 3/4 cups of plain flour in two batches.
  4. Stir in the chocolate drops and the coconut (add more to taste if you’re a chocolate or coconut fan)
  5. Spoon the mixture into small balls and place on trays lined with baking paper. Press down on them slightly
  6. Bake for 15 to 18 minutes or until lightly golden and then transfer to a wire rack to cool and then tuck in!

Try wrapping these goodies up in a bit of baking paper and then brown paper tied up with string for a charming little gift when visiting family and friends.
