Scones and Jam

Whipping up your own scones and jam is dead simple – and with the arrival in spring in Australia there really is no better time to don your apron and get baking these little goodies! Invite your friends over for a little morning tea (a champagne brekkie couldn’t hurt either) and revel in these delicious treats – all you need to add is some store-bought cream!


What you’ll need:

  • 150 grams unsalted butter
  • 500 grams flour
  • 5 1/2 teaspoons of baking powder
  • 1/2 teaspoon of salt
  • 300 mils of milk


  1. Sift dry ingredients onto a clean surface
  2. Chop butter into 1-2cm cubes and spread over flour mix
  3. Pinch the butter with your fingertips into the flour
  4. Make a ‘well’ in the flour/butter and add about a quarter of the milk
  5. Mix the butter, flour and milk together until there is no visible liquid, rubbing the butter into the flour at the same time
  6. Repeat with remaining milk, in stages, until you get a soft dough – you may not need all the milk. Be careful not to overwork the dough
  7. Squash the dough together and flatten to 3-4cm thick
  8. Cut out circles and place on a greased baking tray, butt scones up against one another
  9. Brush tops of scones with milk
  10. Bake at 200 degrees celsius for about 15-20 minutes, or until golden brown on top


What you’ll need:

  • 2 punnets of strawberries
  • 1 cup of caster sugar
  • 1 vanilla pod
  • 1/2 an orange, juiced


  1. Slice the leaves from the strawberries
  2. Halve or quarter strawberries, depending on their size, or leave whole if small
  3. Place into a heavy-based pot and add the sugar and juice
  4. Halve the vanilla pod lengthwise and scrape the seeds out – add the seeds and pods to the pot
  5. Heat over highest temperature until boiling, stirring regularly
  6. Boil for 5-10 minutes until strawberries start to break down and a thick jammy liquid emerges
  7. Remove from heat and pour into a sterilised jar
